After a few months of pruning, the oaths are crushed, the vine is then plowed several times until July to maintain good humidity and clean the rows of weeds. July is the time to water because summers are often very dry.
At the end of August, it's the harvest, the most beautiful period, the result of a year of hard work. Today, the harvesting machine ensures an excellent quality harvest and above all respects the plant. The principle is simple. These are stump-shaking drummers. Under the effect of vibrations, the grapes fall and are collected in the machine by a belt system. The grapes are harvested at perfect maturity. To do this, we carry out almost daily checks, plot by plot, as the harvest approaches.
An analysis and control laboratory assists us in these operations as well as in monitoring the vinification. Thus, it is the alcohol balance that will determine the harvest date.
